For the past few weeks, the humidity has been affecting my bread, leaving me eating deflated but over-risen bread for my weekly breakfasts. I'm trying it with a bit more water (like 1/4 cup less, even) this week to see if it helps, because it's getting quite annoying. It's over-rising, and then collapsing in the oven. It's the damned weather. Grrrr.

We'll see if that works.
