That is good chili!
And I can't really call it Lentil Chili; it's more like chili with lentils.
Here's the recipe! (I saw the original recipe on Livejournal, but did not follow it.)
Chili with Lentils
Ingredients:
1 c. water
1 qt. tomato juice (fresh frozen is best, of course)
1 qt. chopped up tomatoes (again, fresh frozen is best, but I'd say a good sized can would work too.)
1/2 qt. variety of beans from my garden (frozen; you could also use 2-3 cans of storebought beans)
1/2 c. lentils, rinsed and picked through
2 T. chili powder
1 tsp. seasoned salt
a couple shakes of dried garlic flakes or a couple large cloves, chopped
1/4 c. brown sugar
(This would also work in a crock pot/slow cooker.)
Combine all ingredients into a 5qt. soup pot. Season to taste. Cook until boiling, then lower heat and simmer for 2-3 hours or until lentils are mushy and beans are soft. If it is too thick, add additional water or tomato juice. Serves 4-6, easily.
