Applesauce Banana Cake with Orange Marmalade Icing

1 1/2 ripe bananas (or two, we only had 1 1/2 ripe bananas here)
1 qt. applesauce, preferably homemade
1 cup (2 sticks) butter, softened
4 eggs
2 1/3 c. flour
2/3 c. brown sugar
2 tsp. baking powder
1/4 tsp. salt

Orange Marmalade Icing:

One small jar of Orange Marmalade

Preheat oven to 400 degrees F.

Mix ingredients in large bowl in order listed. Mash bananas with fork if needed, or use an electric mixer. Place batter in greased 13 x 9 x 2 inch pan, or use two 8 x 8 inch pans, or two 9 x 9 inch pans. Bake for 30 minutes or until toothpick inserted into center comes out clean. Let cool, then smooth Orange Marmalade on top.

This is an interesting adaptation of a Banana Lemon Cake recipe. It comes out like a custard cake, almost, very moist in the center and crispy on the top and bottom. However, it has a wonderful flavor. A very adaptable recipe, as you can see.
