It's the fourth of July, of course, and Happy Independence Day to everyone celebrating!

I'm making Zucchini Lasagna for today's meal--not completely local, so I can't use it for One Local Summer, but yummy anyway, I hope. (Not my zucchinis, either; I bought some from a guy down the road who sold every drop of his local honey before noon yesterday. :( 41 quarts! So I didn't get any honey. *sigh*)

The zucchini stands in for the lasagna noodles, even. I've never made this before, so we'll see how it turns out.

And I'm about out of Amish cheese, so I will have to make a trip back up there, and hopefully stop at the other place too.
