I wasn't sure what to have for supper tonight, so I raided my pantry and found a box of Lundberg Risotto. The last time I made this (it's like organic Rice-a-roni), it was way too salty, so I decided to chop up one of the eggplants I have sitting on my baking table and add it to the mix.

Yum! It's definitely not too salty now. :)
