Potatoes are planted, but I didn't get anything else planted today.

But the soup--Oh my! Best! Soup! EVER!

Of course it has two sticks of butter, 8oz. of sour cream, and fresh chives in it, not to mention cheese, garlic, yummy potatoes, turkey bacon, and milk as well. YUM.

Loaded Baked Potato Soup

2 sticks butter
2/3 c. flour
1/4 c. chives, chopped (I used regular and garlic chives)
4 or 5 small or medium cloves of fresh garlic, peeled and chopped
8 cups milk
8 oz. sour cream
1 1/2 cups shredded cheddar cheese (I used medium cheddar and smoked cheddar)
6 large baking potatoes, cooked, peeled, and cubed (you could leave on the skins if you are using organic potatoes, of course)
3 medium carrots, peeled and chopped
1 pack turkey bacon, cooked and cut into small pieces (1 pack was 12oz.) (this could be optional)


Melt the two sticks of butter in a large (8qt) soup pot. Once butter is melted, add chopped fresh garlic, chives, and flour. Mix well, and mash out flour lumps. When mixture becomes thickened and starts to boil, add milk, sour cream, shredded cheese, carrots, potatoes, and turkey bacon. Simmer on low for about 2 1/2 hours, or until carrots are done. It will thicken as it cooks, but if it doesn't, you could always mash up some of the cubed potatoes to help it along.

Since this recipe is pretty much cooked except for the carrots, you could use leftover carrots as well as leftover baked potatoes and make it much quicker. In a crock pot, I would almost just put in the potatoes and carrots uncooked, and let them cook throughout the day.

The original recipe called for onion instead of chives and garlic--Onions don't like me, and chives and garlic made it quite tasty. You could substitute onions, of course.

The initial butter/flour/chives/garlic mixture would be a great sauce for something; it smelled heavenly.

The smoked cheddar cheese gave it just the right flavor.

You could leave out the bacon and have vegetarian Loaded Baked Potato Soup just as easily, especially if you use smoked cheddar.

Again, YUM. This will definitely be made again.
