I came upstairs last night to post my picture of One Local Summer Week #7, and then promptly forgot to post the picture. So here it is.


Another skillet supper, but this time with spaghetti squash that had to be used up, eggplant, half a purple pepper, garlic, swiss chard, and some beet leaves as well. Everything except the olive oil was from my garden. I thought about putting a chopped up tomato in it, then decided not to after a taste-test.

Honestly, I think this might taste good cold, too; I'm going to eat the rest for lunch today and see. A very nice, light dish that tasted a lot better than it looked! :)
